The heads of Western Rock Lobster that have been tailed, are ideal for use in soups such as bouillabaisse, bisques and chowders.

Using an additive to prevent blackening, Western Rock Lobster heads are cleaned, drained and packed in 10kg cartons and snap frozen to -40°C.
